Starters: Cauliflower & white onion soup with curried pearl barley & sorrel, beetroot, apple & chestnut salad with beetroot gaspacio, butternut squash, pear & walnut salad with lentil dressing.
Main courses: Roasted gnocchi with winter vegetable, spinach & black truffle, asparagus & broad bean risotto with radish salad, roasted polenta & asparagus caviar, Provencal vegetables & tomato dressing.
Desserts: Roasted pineapple & mango sorbet & lemongrass, dark chocolate panacotta with morello cherry sorbet, selection of fruits with sorbets.
They can supply hotel guests with a vegan cooked breakfast and stock soya milk.
